Dondo's Cowboy Pizza

Dondo's All Purpose Spice & Rub
Dondo's Sweet BBQ Sauce
Dondo's Hot or Original BBQ Sauce
1 chicken breast
sliced soft mozzarella
3-4 slices bacon, cooked crisp and crumbled
thinly sliced mushrooms
sliced red onion
pizza dough - recipe below

Rinse chicken and pat dry with paper towels. Coat breast with All Purpose Spice & Rub then grill. Cut into bite size pieces when cool.

Roll pizza dough out to required size. Mix equal parts sweet bbq sauce and either hot or original sauce, spread over dough. Cover sauce with remaining ingredients. Grill about 3-4 minutes then rotate pizza. Cook additional 3-4 minutes, watching carefully not to burn crust.

Pizza Dough

1 pkg. yeast
1 cup warm water (105 - 115°)
4 cups flour
1 tsp. salt

Dissolve yeast in warm water. Let sit approx. 10 minutes. Add flour and salt. Kneed until smooth, about 8 minutes. Place in greased bowl and cover with cloth. Let rise in warm place until doubled in size. Punch down, turn and cover with saran wrap, place in refrigerator until needed.


Dondo's Grilled Baby Back Ribs - Wet Style

3 racks baby back ribs
Dondo's All Purpose Spice & Rub
Dondo's BBQ Sauce of your choice

If there is a membrane on the bone side of the ribs remove it. Coat ribs with Dondo's All Purpose Spice & Rub then allow to come to room temperature, approx. 1-2 hours.

Place ribs bone side down on gas or charcoal grill that is 275 - 300°. Check ribs every 10 minutes or so to make sure they don't burn. Turn when bone side is golden brown, approx. 20 minutes. Cook until meat starts to pull away from the bone, approx. 20-25 minutes.

Remove ribs from grill. Cut into 4 rib sections with 1″ slice between ribs. Put in 2″ deep baking dish. Cover with Dondo's BBQ Sauce of your choice then seal pan with aluminum foil. Return to grill or place in oven at 275°. Cook for 1 hour or until ribs pull easily from bone.


Dondo's Grilled Baby Back Ribs - Dry Style

3 racks baby back ribs
Dondo's All Purpose Spice & Rub
Dondo's BBQ Sauce of your choice

If there is a membrane on the bone side of the ribs remove it. Coat ribs with Dondo's All Purpose Spice & Rub then allow to come to room temperature, approx. 1-2 hours.

Cook ribs bone side down on grill or in oven at 250° for 4 hours. Cook additional hour basting ribs with Dondo's BBQ Sauce of your choice every 15 minutes.


Dondo's Baked Beans

1 53 oz. can Pork & Beans
1/2 cup Dondo's Original BBQ Sauce
1/2 cup ketchup
1/2 cup brown sugar
2 tbsp. dry mustard
1/2 small onion, chopped
3 tbsp. Dondo's All Purpose Spice & Rub
4-6 slices bacon, chopped and fried crisp*
1 tsp. salt
fresh ground pepper to taste

Combine all ingredients well. Put in 2 qt. oven proof dish. Bake 1 to 1 1/2 hours at 375°.

* Optional for added flavor: add drippings from fried bacon


Chili Beans

16 oz. bag uncooked pinto beans
1 lb. ground meat (beef, chicken, turkey)
1 medium onion, chopped
1 clove garlic, minced
4 T. Dondo's All Purpose Spice & Rub
1 15 oz. can tomato sauce
1 14.5 oz. chopped tomatoes
1 small can diced green chilies or jalepenos
Salt to taste

Sort and wash beans. Soak beans 2 hours or overnight. Drain. Put beans and 4-6 qts. water in 8 qt. pot. Cook over medium heat until beans are tender, adding water when needed. Cook ground meat and drain. Add to beans. Add remaining ingredients. Cook 1/2 hour or longer if desired.


Dondo's Spicy Fried Chicken

Dondo's All Purpose Spice & Rub
Flour
1 whole chicken cut into pieces
Vegetable oil

Rinse chicken and pat dry with paper towels. Coat pieces with All Purpose Spice & Rub then coat with flour. Heat oil in large skillet. Fry chicken until completely done.



Dondo's Corn on the Cob

Clean silk from ears of corn. Coat corn with butter then sprinkle on Dondo's All Purpose Spice & Rub. Wrap in aluminum foil or pull corn husk back over ear and tie with piece of husk or string. Bake at 325° or grill for 35-40 minutes.
